Season the chicken with half of the salt and the pepper, set aside.
Heat 1 Tbsp. olive oil in a large skillet over medium heat. Add the chicken pieces and cook until light-golden, about 5-6 minutes. Remove the chicken and set aside.
In the same skillet, add the remaining olive oil. Sauté the onions for 2-3 minutes until they begin to soften.
Add the sliced portobello mushrooms, jicama, cashews milk, tomato sauce, Dijon mustard and the remaining salt. Mix well to combine and let it cook for 10 minutes.
Return the cooked chicken to the skillet. Stir everything together and correct the seasoning if necessary. Let simmer over medium heat for another 8-10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Remove from heat, sprinkle the chopped green onions on top and serve over rice, quinoa, or zucchini noodles for a healthy and satisfying meal.
